Flaky Dal Kachori for Diwali Festivities
Kachori is a flaky, deep-fried pastry stuffed with spiced lentils. Flavored with fennel and cumin, these golden delights are a Diwali favorite across India!
Ingredients
For Dough:
- 2 cups all-purpose flour
- 1/4 cup oil
- 1/2 tsp salt
- Water as needed
For Filling:
- 1 cup moong dal (yellow lentils), soaked
- 2 tsp Phoran Saunf (Fennel Seeds)
- 1 tsp Phoran Cumin Seeds
- 1 tsp Phoran Kashmiri Chilli Powder
- 1 tsp Phoran Coriander Powder
- 1/2 tsp Phoran Garam Masala
- 1 inch ginger, grated
- Salt to taste
- Oil for frying
Instructions
Step 1: Prepare Dough
Mix flour, salt, and oil. Add water and knead into stiff dough. Rest for 30 minutes.
Step 2: Make Filling
Drain soaked dal and coarsely grind. Heat oil, add fennel and cumin seeds. Add ginger, ground dal, all spices, and salt. Cook for 5-7 minutes until dry. Cool completely.
Step 3: Stuff Kachoris
Divide dough into balls. Roll into small circles. Place filling in center, seal edges, and flatten gently.
Step 4: Fry
Heat oil on medium flame. Fry kachoris, pressing gently with slotted spoon to help them puff up. Fry until golden brown.
Step 5: Serve
Serve hot with aloo sabzi, tamarind chutney, or yogurt. Perfect for Diwali breakfast!
